PEACH MERENGUE TARTLETS

COOKBOOK: Jamie’s 30 Minute Meals

Even though I like Jamie’s cookbooks, his timing is always out of whack! This dessert recipe comes close to 30mins but will still hit the 45mins+ time frame for a beginner.


Easy to make and shortcrust is a good pastry to start experimenting with if you’re new with pastries.

RECIPE

Serves 4


Tray for 8 muffins

Shortcrust pastry x 2 sheets, thawed

8 tablespoons of raspberry jam

400g can of peaches in natural juices, drained

4 egg whites

1 tablespoon vanilla extract or vanilla paste


Grease the tray with butter.


Take the size of the outside of the muffin and cut the shortcrust slightly larger for each mould. Push each of the round pieces of shortcrust into the mould making it look almost like a flower.


Bake in moderate over for 5-7mins only and remove immediately.


Place a spoonful of jam at the base of each of the tartlets. Top each tartlet with one or two pieces of peach.


Beat the egg whites until they form peaks. Add the vanilla and allow it to combine well. Pipe or spoon the meringue over each of the tartlets following the shape of each.


Bake in a moderate oven for approx 8mins (keep an eye on them and dont allow them to burn. Each oven is different when baking) Remove them from oven once they are firm & golden in colour. Allow them to cool before serving. Can be served with ice-cream.
