COOKBOOK: COLES Mag March 2017

This was a nice little surprise! A great salad which can be served with meat, vegetables or eaten on its own.

Sprinkle some shaven parmesan and a little thyme and you have yourself a lovely salad.

Simple & very easy to make and it will throw out lots of flavour! Enjoy


Serves 4

1 tablespoon of olive oil

1 leek, white section only, sliced thinly and rinsed well

8 rashes of bacon, sliced or diced

2 garlic cloves, chopped

500g frozen peas

1/4 cup chicken stock

1 small spring of thyme

200g shaven parmesan

Heat olive oil and add bacon to frying pan. Fry for approx two mins. Add garlic fry for a further min or so. Add leek & stock and fry until leek is soft in texture (approx a further 4-5mins) Add frozen peas and cook until peas are heated through. Remove from heat. Serve in a bowl and top with thyme and parmesan cheese.
