ROAST CHICKEN WITH VEGETABLES

I do like a good chicken roast! This is always a favourite Sunday dinner for many and it’s also a very easy recipe. The cooking time is what you need to pay attention to. Vegetables and chicken cook at different times and therefore you cannot add them all in the same pan to roast for the same time it will take to roast a chicken.

I get very angry when I see that a recipe suggests that you add it all in the oven at the same time.

RECIPE Serves 4-6

40g butter, softened

1 tablespoon garlic powder - optional

1 tablespoon of marjoram, dried

1 tablespoon of thyme, dried

1 tablespoon of parsley, dried

1 large roast chicken (approx 2kg)

Salt and pepper

600g small medium potatoes, peeled and halved

2 medium carrots, peeled and sliced into 5cm pieces

1 medium onion, peeled and sliced

500g beans

1 tablespoon of butter

Olive oil

Pre heat the oven 180C

Place chicken breast up in a deep casserole oven dish.

In a small bowl add the butter, garlic , salt & pepper, thyme, parsley and marjoram, combine well. Rub the chicken with butter mixture (this can be done with the hands, I chose to use a butter knife which would need to be dipped in hot water after each stroke).

Place in oven and roast for 20mins.

Take the roast out of oven and add to the casserole dish the potatoes, onions and carrots. Drizzle with olive oil and salt and pepper over the vegetables. Give them a bit of a mix and return to the oven for another 40-45mins.

In the meantime, add butter to a frying pan, allow it to melt and add the beans. Fry them for 2 or so mins, or until they’re just softening. Add salt and pepper. When the chicken is cooked, add the beans to the vegetable medley. Its now ready to be served or you can transfer to a serving plate.
