SPAGHETTI CARBONARA

How simple is this recipe! My husband said he could even cook this one u for the family! The kids will love it and so will the adults. The pancetta can be substituted with bacon but it will change the flavour of this dish. Pancetta can be bought as a whole piece at a deli. I give them the amount required and they cut up a piece. Pancetta can be a little stubborn to cut and dice but very much worth it.

RECIPE

Serves 4


350g pancetta, diced

160ml thickened cream

6 eggs, yolk only

400g spaghetti

1 tablespoon of oil

Salt

110g parmesan cheese, grated

Extra shredded parmesan cheese


Add pancetta to a hot frying pan and allow the pancetta to golden in colour.


Bring water to boil, add oil and salt. Add pasta and cook as per the package. In the meantime, whisk the egg yolk in a bowl, add the cream, mix well. Add the pancetta (drain as much of the juices) and mix well. Drain pasta, place it in a deep serving bowl. Add egg & pancetta mixture and combine well. Add parmesan and combine well. Serve with extra parmesan
