SPICY SQUID SALAD

Who doesn’t like squid! Add it to a salad and serve it as a meal!


Squid can taste like chewing rubber if over cooked. There are two methods to cooking squid, bbq / grilling & only do so for a few minutes on very high heat, or boiling on low temp for 30mins. A great way to tenderise it is to marinade in kiwi fruit or lemon juice for a few hours.


This was a delicious salad, easy to make and I’m sure if you’re a squid lover, you will love it!

Serves 6

1.2kg of squid hoods, cleaned

2 tablespoons lemon grass (I used it tubed for marinating)

125ml (1/2 cup) sweet chilli sauce

2 cloves garlic, crushed

2 tablespoons peanut oil + for frying

1 1/2 cups lemon juice

100g lettuce leaves

80g bean sprouts, roughly chopped

1/3 cup mint leaves, chopped finely

1/3 cup parsley, chopped finely

3 medium tomatoes, diced

Salt & pepper

Cut hoods through the side to flatten. Cut into three triangles pieces. Score the inside of each piece in a diagonal pattern.

Combine hoods with lemon juice, lemon grass and sweet chilli sauce, peanut oil & garlic. Refrigerate for 3 hours or overnight.

When draining the hoods, retain 2 cups of marinade.

Add a tablespoon of peanut oil in frying pan, stir fry the bean sprouts for half a min. Add the retained marinade and fry for another half a minute. Add mint and parsley. Turn off heat. Add tomatoes, salt & pepper. Combine well and set aside.

Heat up a BBQ plate. Place the squid pieces and allow them to curl up as they cook. Turn them one or twice. This should take approx 5mins. Taste test to ensure they are cooked through.

Place lettuce on serving plate. Top with some of the tomato mixture.
