COOKBOOK: Super Fast Lunches - That’s Life cookbook
It’s a perfect summer’s day lunch. Having said that, I made this in Autumn and it was just as perfect!
A very easy to make salad that can be served slightly on the warm side or cold. Serve it with a side dish of crackers and your lunch is ready!
RECIPE
Makes 4
1 tablespoon of olive oil
red onion, sliced thinly
2 garlic cloves, chopped finely
2 large corn on the cob, husks removed
200g punnet of cherry or grape tomatoes, halved
2 tablespoons finely chopped parsley
1 avocado, chopped
1 lime (juice)
Boil water in a pot and add the corn. Simmer for 7mins, drain and allow them to cool.
When corn is cool, the each cob and carefully cutting
Heat oil in a pan, add garlic and onion and fry until onion is just soft. Add salt and pepper. Add corn and fry for 1 extra minute. Turn off the heat. Add the tomatoes and avocado and mix softly. Ready to be served.
