TURKEY KOFTE WITH SPRING FATTOUSH

Not only were these delicious but super healthy.


Turkey is not the cheapest in some parts of the world so this can be substituted with ham if you wish.

Best to keep them in the fridge for a good 20mins or so to set before frying otherwise they could break up in the pan!


These turkey beauties with honey along with the pistachio nuts and the fattoush were just absolutely delicious

RECIPE

Serves 4

500g turkey mince

2 shallots, finely sliced

Handful of parsley

2 tablespoons pistachio nuts

2 eggs, lightly beaten

3 tablespoons olive oil

2 tablespoons honey Salt & Pepper



SPRING FATTOUSH

1 tablespoon of olive oil

200g snow peas, cut lengthways

1 bunch of asparagus, sliced lengthways

2 cucumbers, peeled, roughly chopped

3 radishes, sliced thinly Salt and pepper

2 wholemeal lebanese flat breads

1/2 lemon, juice


Place turkey (if not minced) , shallots, parsley and pistachio nuts in a processor and mince.

Place mixture in bowl. Add egg and honey, salt & pepper and will well.

Take a large tablespoon of mince and with the palms of your hands roll into an elongated croquette shape. Repeat with the rest of the mixture. Allow them to set in the fridge for approx 20-30mins.


Take the sliced asparagus and cook for approx 6-7mins in microwave (place in a deep microwavable bowl and add a cup of water to the base) . Drain and set aside.


Add the olive oil in pan, add the snow peas and stir fry for a min or two. Add radishes and stir fry for a further minute. Add cooked and drained asparagus. Season with salt & pepper. Turn heat off. Add cucumbers and mix well. Transfer to serving plate.


In a flat frying pan, add 3 tablespoons of olive oil. Fry the kofte on each side for approx 1 minute, until they are nice and golden. Remove from pan and place them on the serving plate along with the lebanese bread and fattoush.

Sprinkle with lemon juice.


Ready to serve


LEBANESE BREAD: Split the bread down the middle. In a hot frying pan, place each piece facing down and toast lightly (approx few secs only). Tear the bread into large pieces to serve.
