Pipis are the craze at this moment!
And so they should be, they are delicious!
A kilo cost me AU$10 at the markets, that’s pretty impressive.
Restaurants are serving them as entrees and mains and so they should! They charge a small fortune for a dish that is delicious and makes them good money!
I think the pipis are much nicer than a mussel or clam. Very easy to eat and extremely flavoursome.
I made this dish on a Sunday for family dinner and I think everyone went for seconds and thirds. My extremely fussy seafood eater (my youngest daughter) absolutely loved it!
RECIPE: Super easy to follow and make. In no time you will have a delicious meal to serve.

RECIPE
SERVES 4
olive oil
2 tablespoons - sweet & sour sauce
4 cloves of garlic chopped/crushed
1kg pipis
250ml white wine
6 rashes of bacon, diced /chopped
1 cup peas, frozen or fresh
500g risoni, cooked in salted water as per packet instructions
1 bunch chives, chopped/ sliced
1 punnet of cherry tomatoes, halved
Salt & pepper
lemon juice to taste
In a heavy pan, add olive oil and fry garlic until soft. Add bacon and fry a further 5 minutes or until cooked through,. Add sweet and sour sauce and mix. Add the puppies and sauté for one minute until they open. Add other ingredients. Mix mixture in with the cooked risoni, top with lemon juice and it is ready to serve.
