Delicious, but not the easiest cake to make.

The crumbling of frozen pastry was a new technique for me and not only was it decorative, I didnt find it heavy to eat. This was a really delicious cake!

RECIPE: Not the easiest to read but you finally make it to the end.

It's a recipe that can take longer to read and follow than to make it. I have modified the original recipe to reflect the way I made it.

Don't forget to allow it to set for a good 40mins or so before you serve it! This will allow it to firm and it won’t be a messy to cut and serve.

RECIPE

SERVES 8

BEST MADE ON DAY OF SERVING

1 cup (150g) plain flour

1/2 cup (75g) self raising flour

1/2 cup (75g) custard powder

1/3 cup (75g) sugar

150g butter, chopped

1 egg, separated

1/4 cup (60ml) water

1/2 cup (75g) ground almonds

1 tablespoon caster sugar, extra

FILLING

300g frozen raspberries, thawed

300g frozen blueberries, thawed

1/2 cup (110g) caster sugar

1/4 cup (35g) cornflour

410g can pie apples

Process flours, custard powder, sugar and butter until mixture is crumbly. Add egg yolk and enough water to make ingredients cling together.

Knead dough on floured surface until smooth.

Divide dough in half, cover, refrigerate one half for 30min, freeze remainder until firm.

Roll refrigerated pastry between sheet of baking paper until large enough to line a tin 24cm round, loose based flan tin.

Ease pastry into tin, trim edges. Cover pastry with baking paper, fill with dried beans/rice, place on over tray. Bake in moderate hot oven for 10mins or until pastry is lightly browned, cool.

Sprinkle half the nuts over pastry base.

Top with filling, sprinkle with remaining nuts.

Coarsely grate frozen pastry over filling. Brush with some egg white, sprinkle with extra sugar. Bake in moderate hot oven for about 20mins or until browned.

FILLING

Drain berries. Place berries in small pan with sugar, stir over low heat until sugar dissolves.

Drain the 1/2 juices into jug, blend cornflour with juices. Add cornflour mixture to pan, stir over heat until mixture boils and thickens. Stir in apples.
