OMG I found the recipe for you!
This beats nachos or tacos! All you need is a packet of tortillas and you have yourself a fantastic and easy meal on your hands.
Very easy to make. Great for beginners. Not only will they enjoy making it, they also enjoy eating it!
RECIPE: Super easy to follow. This was taken from a vey old magazine given to me by a work colleague (Maryanne) who I’m pretty sure will attempt to make this one!

RECIPE
SERVES 4
1 tablespoon of olive oil
1 red onion, finely chopped
1 red capsicum, finely chopped
2 garlic cloves, chopped
500g beef mince
2 tablespoons tomato paste
420g can of mixed beans
4 x 20cm tortillas
2 cups of grated cheese
sour cream and avocado
Heat oil in saucepan over medium heat. Add garlic,onion and capsicum. Stir for 3-4mins or until tender. Add mixed beans.
Increase heat to medium-high. Add mince. Cook, stirring for 5 minutes or until browned. Add tomato paste. Stir to combine. Simmer for 4-5mins until thickened slightly.
Preheat Oven 200C.
Lightly grease a 20cm cake tin. Place one tortilla in base of tin. Spoon one third of mixture over the tortilla. sprinkle with cheese.
Repeat this 2 more times.
Bake in oven for 20-25mins or until golden on the top. Cut into wedges and serve with sour cream and avocado and/or green salad.
