CHICKEN PESTO PASTA

The recipe is very simple. It was written in 6 sentences with the ingredients added only in the instructions. I will create a list of the ingredients & restructure the recipe instructions so it can be easy to follow.
Why did I love this pasta dish? Most pasta sauces take some time to cook and perfect. This sauce was made with a shredded cooked BBQ chicken and all other ingredients were stir fried. It was a perfect fuss-free pasta sauce.
Eat it or starve!?? To all those olives, chicken and rocket lovers, you’ll definitely eat it!
500g BBQ chicken, shredded
500g penne (pasta)
2 tablespoons butter
200g bacon , sliced
100g pine nuts, crushed
125g olives, chopped
200g rocket, shredded
3 tablespoons of basaltic vinegar
1 tablespoon of dijon mustard
2 tablespoons olive oil
Salt and Pepper
Fry the bacon until cooked through. Add the pine nuts, olives, rocket. Set aside.
Cook penne as per package instructions. Drain and immediately place in large serving bowl. Add butter and mix until butter has melted. Add mustard and mix.Set aside.
Add chicken to bacon mix. Add vinegar, olive oil and salt & pepper and mix. Add mixture to pasta. Ready to serve.
