This salad was quite nice. It screamed out ‘summertime salad!’. I think I went overboard with the orange which made it a little too citrus in taste but I loved it anyway.

I served with a meat dish and this was a lovely side salad with our meal.

Eat It Or Starve!?? You could starve if this is the only thing on your plate!



1 medium orange

1 tablespoon olive oil

1 tablespoon white wine vinegar

1 teaspoon wholegrain mustard

80g mixed salad leaves

1 small continental cucumber

1 medium avocado halved and sliced

Finely grate rind from orange. Peel orange and segment. Squeeze membrane to capture juice (you will need two tablespoons of juice) Discard membrane.

Place oil, vinegar, mustard, orange rind and orange juice in a screw top jar (or blender) . Season with salt and pepper. Secure lid. Shake to combine.

Place salad leaves, cucumber, orange segment and avocado in a large bowl, add vinaigrette , toss gently to combine and serve.
