POTATO & BACON FRITTATA

Great recipe! Loved this dish! Served with a green salad, it made the perfect weekend lunch.
Dont forget to boil the potatoes before you add it to the mix. There is nothing worse than uncooked potato in a dish.
This is a great affordable meal to make for the family !
Eat it or Starve!?? A definite munch munch!
2 tablespoons oil
1 large brown onion, halved, thinly sliced
5 (350g) bacon rashes, chopped coarsely
2 cloves of garlic, chopped
Parsley - a handful, chopped
1kg potatoes, peeled and cubed
salt & pepper
In a deep pot bring water to boil, add a pinch of salt. Add potatoes (water level should cover the potatoes, if it doesn’t , top up with water) Boil potatoes for 18mins , drain and set aside to cool.
Heat the oil in frying pan. Cook onion, bacon and garlic, until soft.
Transfer to large bowl. Add the potatoes to this mixture and mix lightly. Whisk egg in a separate bowl, add salt and pepper. Pour egg over the bacon and potato mixture . add the parsley and mix lightly.
Grease a deep large casserole dish. Add mixture in casserole dish and bake in moderate oven (180C) for 50mins or until set.
Serve with green salad.
