STRAWBERRY & BALSAMIC CUPCAKES

Perfect recipe for kids! Super easy to make and it will keep them busy on a rainy day. Not only will it keep them occupied for an hour or so but they will also not hassle you for food!

I was hesitant about adding balsamic vinegar to the icing mix but it was delicious.

Eat it or Starve!?? You’ll only starve if you’re on a diet!!

RECIPE

APPROX 18

225g butter, softened

190g caster sugar

200g plain flour

3 teaspoon baking powder

4 eggs, lightly whisked

6 medium strawberries ,pureed

FROSTING

240g cream cheese, softened

200g icing sugar, sifted

1 tablespoons balsamic vinegar

3 tablespoons butter, softened

10 chopped strawberries to decorate

Preheat oven to 175C (350F). Place 18 cupcake cups in muffin pans.

Combine the butter, sugar, flour, baking powder & eggs in a bowl. Beat with an electric mixer until light and creamy for approx 2-3 minutes. Spoon the batter in a bowl and add the strawberry puree, fold.

Spoon batter in cupcake holders and bake for 20minutes. Remove from oven. Leave for 5 minutes then move to cooling rack to cool for approx 10mins.

FROSTING

Beat the cream cheese, icing sugar, balsamic vinegar and butter until smooth and creamy. Place in the fridge for 20mins.

You can spread the frost on the cupcake with a spatula or you can pipe it on. Decorate with chopped strawberries.
