Good old minestrone! Have I made this before!? Of course I have, but not from this cookbook! Love the name “Grandma’s Special Recipes” and boy was it delicious!
I call this a vegetable medley. It has nine different vegetables plus red kidney beans, macaroni and herbs. This is the type of dish that can turn me into a vegetarian.
As you know when there is various vegetables involved, you require some time to prepare and this recipe needs just that. Yes, a little time consuming to make but super healthy and delicious to eat!
Eat it or Starve!?? There isn’t anyone who won’t eat this dish!

RECIPE
SERVES 8
2 tablespoons olive oil
1 large onion, chopped
4 tablespoons of each thyme & parsley, chopped
3 garlic cloves, chopped
2 large carrots, diced
3 large potatoes, diced
3 celery stalks, diced
1 red capsicum, diced
150g green beans, chopped
2 cups shredded cabbage
8 cups beef stock
425g chopped tomatoes
100g macaroni
440g red kidney beans, drained
Heat the oil in a large saucepan. Add garlic and fry for a minute, add onion and cook over low heat until onion is soft, approx 5mins.
Add carrots, potatoes, celery, zucchini, capsicum, green beans and cabbage. stir constantly for 5 minutes. Add tomatoes and the stock. Bring to boil and reduce heat to simmer. Cook for 18mins.
Add macaroni and stir. Add herbs. Cook for a further 12mins (or as per pasta instructions).
Ready to serve. Serve hot with garnish of parmesan cheese.
