BLINIS WITH CHILLI CRAB SALAD

Anything that resembles a pancake my kids are ready to eat!

These are really easy to make and delicious! If you have friends coming over surprise them with something other than the good old cheese platter with olives & chips. These blinis are so filling that you might not even need to prep dinner afterwards.

RECIPE

MAKES 24

BLINIS

1 cup of self raising four

1 tablespoon plain flour

2 eggs, beaten lightly

A pinch of pepper

3/4 cup buttermilk

20g melted butter

CHILLI CRAB SALAD

1 tablespoon of olive oil

1 small onion, chopped

1 chilli chopped finely

150g crab meat

1 tablespoon of chopped mint

1 tablespoon of chopped chives

1 teaspoon of grinder lemon rind

2 tablespoon of lime juice

2 teaspoon of fish sauce

1/2 lebanese cucumber , seeded and chopped finely

BLINIS

Sift flour and pepper into a medium bowl, add eggs and butter milk and whisk until smooth. Add melted butter and mix well..

Cook blinis in batches. Grease a frying pan with butter , drop a tablespoon of batter . Cook until browned on each side (less than a minute on each side ). Set aside

CHILLI CRAB SALAD

Heat oil in frying pan, add onion, chilli and herbs and fry lightly for a minute. Add crab, lime rind and juices and mix well,. Turn off the heat and add cucumber. Mix well.

Top each blini with a tablespoon of crab salad topped with a drop of mayo.
