This is a great for those special occasions when you have a few friends over and you're never too sure what to put out on the table as a starter.
Super easy to make , delicious, affordable and beautiful on presentation !

RECIPE
Makes 3 cups
500g frozen spinach, thawed
1 teaspoon of butter
1/2 onion, chopped
300g ricotta cheese
300g carton sour cream
1/3 cup of chives
salt and pepper
30g packet of french onion soup
1 round cob bread loaf
Squeeze and discard all liquid from spinach.
On low heat, melt butter in frying pan and fry lightly the onion & chives.
Season with salt and pepper & soup mix. Add the spinach and ricotta. Mix well.
Add it in a blender and blend until smooth. Refrigerate until time to serve.
Slice a 3cm thick slice off top of loaf. Set aside. Remove bread from centre of loaf. You should have a clean bowl shaped shell. Spoon the spinach mixture into bowl and top it with the bread lid. Ready to be served.
