CHICKEN & SPINACH WRAPS

Not all wraps are as simple to make. When we think wraps, we think cold meats and some salad and off you go!
This one is a little different! This one makes up for a meal. There’s a little frying to get that delicious filling ready for your wrap and served with salad it will make the perfect lunch or dinner for the family. Absolutely loved it!
1 tablespoon olive oil
150g boneless cooked and shredded chicken
2 tablespoons chicken stock
2 tablespoons balsamic vinegar
Salt & pepper
A large handful of spinach leaves
1 large carrot, cut into strips or julienne
1 stalk celery, cut into strips or julienne
1 brown onion, sliced
Heat oil. Fry the onion for a minute, add carrot and celery and fry until soft. Add salt . pepper, stock and balsamic and leave on low until for 5mins. Turn heat off, add spinach leaves and mix. Leave to warm but off the heat.
Spread mayo on wraps. Add two tablespoons of mixture in centre of wrap. Fold wrap up (refer to video for wrapping) to secure filling.
Heat up a grill or flat toaster and toast for a minute or two or until golden brown.
Serve with salad
