CHICKEN & PESTO QUESADILLAS

Are you wondering what else’s you can make with a cooked chicken from the supermarket?

Here’s a super easy one for you that you can make for breakfast, lunch or dinner!

Shred the chicken and in no time you have made yourself a delicious quesadilla

RECIPE

SERVES 4

4 cups cooked chicken , shredded

1/4 cup pesto

8 wholemeal tortillas

1 tablespoon of olive oil

2 small red capsicums, sliced

2/3 cups of grated cheese

baby rocket

Salt and pepper

Combine chicken and pesto in a bowl.

Heat olive oil in frying pan and fry capsicums until soft, drain and set aside.

Heat a grill (oven 160c) or a sandwich press.

Place one buttered tortilla on the base, top with chicken mixture , capsicum, cheese and rocket. Too with second buttered tortilla. Press or grill.

Cut into quarters or halves to serve.
