BACON RANCH POTATO SALAD

I’m sure I have made something very similar not so long ago….
A nice change to a salad, a potato salad. I loved the celery, bacon, chives and cherry tomatoes combo, it worked very well!
1 tablespoon olive oil
10 small red potatoes, cubed
1 cup cherry tomatoes, cut in half
1/2 cup chopped celery
1/4 cup chopped chives
1/4 cup chopped bacon
1/2 cup ranch dressing
In saucepan, place potatoes, add water to cover, add salt, and boil until cooked, approx 10-12mins. Drain and allow to cool off at room temperature.
In a frying pan, heat up olive oil and fry bacon for 5 mins, add the celery, chives, and fry for a further 2 mins,. Add the tomatoes and mix well. Allow to slighly cool off.
Place potatoes in a deep salad bowl. Add the tomato mixture and carefully fold in (without squashing the potato). Its ready to serve.
