WHITE CHOCOLATE ROCKY ROAD

I’m pretty sure that these squares lasted 5minutes on the plate!
Not the most attractive look on a plate by OMG they were delicious!
I must say that I prefer this variety of rocky road made with white chocolate.
I only made one tray, I should have made two!
Great for beginners in the kitchen.
Makes approx 20 squares
1 1/2 cups marshmallows (mini or chopped)
2 cups of rice bubbles
1 cup shredded coconut
1/2 cup dried apricots, chopped
500g white cooking chocolate, chopped
1/2 cup glazed cherries, roughly chopped
1/2 cup pineapple, chopped
Lightly grease a 20cm x 30cm lamington tray, line base with baking paper.
Combine, rice bubbles, marshmallows and coconut in a bowl. Set aside.
Place chocolate in a microwave safe bowl and cook on high for approx 2mins.Keep checking every 30secs (chocolate melts very quickly in microwaves)
Add chocolate to mixture, mix well. Add cherries and pineapple, mix well.
Add mixture to prepared pan and press down with a spoon dipped in hot water. Allow to sit in fridge for 1-2 hours before cutting into squares.
