BEEF WITH BEETROOT & SAUCE GRIBICHE

OMG that gribiche sauce was absolutely delicious!
The look of the dish was not too inviting but after taking that first bite there wasn’t anyone that didn’t mention how delicious it was!
I recall hearing from all that it was the taste of the sauce in a Big Mac!! Well I thought so too! A fresher version of course……unbelievably delicious!
This recipe was for ‘carpaccio' but there is nobody in my family who will eat the meat raw! Frying it for less than a minute was the perfect thing to do for my fussy meat eaters :)
A must try!
500g piece beef eye fillet, trimmed
2 cans of beetroot, sliced thinly
2 tablespoons of olive oil , plus 1 extra
1 cup of whole mayonnaise
1 tablespoon of tarragon, chopped
3 tablespoons of dill, chopped
3 tablespoons of parsley, chopped
2 tablespoons of peppercorns
1 tablespoon balsamic vinegar
1 tablespoon dijon mustard
3 tablespoons shallots , sliced finely
Slice the beef eye fillet thinly. Top with greaseproof paper and pound lightly until flattened and extended on all sides.
Heat olive oil in frying pan and fry the beef pieces for approx 1 min or until just cooked through. Set aside.
Heat extra tablespoon in frying pan and add shallots. Stir fry for a few seconds, add herbs, stir for a min and turn off heat. Add beetroot, peppercorns, vinegar r &mustard (not shown on video), add mayonnaise and mix delicately.
Pour the sauce mixture on a serving plate. Top with beef and serve immediately.
