SWEET & SPICY SALMON & QUINOA STIR-FRY

This recipe has every definition of a healthy feed.

Very easy to make, just don’t overcook the salmon nor the quinoa!

RECIPE

SERVES 4

4 salmon fillets, 150g each

200g uncooked quinoa

300ml vegetable stock

2 tablespoons of olive oil

2 bunches bok toy, chopped coarsely

400g beansprouts

MARINADE

400ml orange juice

8 tablespoons honey

1 tablespoon dry chilli flakes

2 tablespoons soy sauce

For the marinade place all the ingredients in a bowl and stir well.

Place the salmon in a deep kitchen freezer bag and pour marinade in the bag. Allow it to refrigerate for 2hrs or overnight.

Rince the quinoa under cold water.

In a deep pan, add quinoa and stock. Bring to boil. Add white stem of the bok choy and keep stirring. Add the beansprouts.

In the meantime, heat olive oil in frying pan and stir fry the bok choy (greens) only. Add these to the quinoa mix only 5-3 mins before the quinoa is fully cooked.

Preheat the oven to 200C. Remove the salmon from the bag and place each piece in an oven dish. Add a small amount of marinade in the pan. Bake in moderate oven for approx 15mins.

Serve quinoa mix on plate topped with a piece of salmon. Drizzle some of the pan juices and serve immediately.
