SPICED BEEF & ALMOND PILAF
COOKBOOK: Super Food Ideas - May 2008
It was nice, nothing overly exciting but nice.
A pilaf is a rice dish cooked in a broth and can have a meat and cut vegetables added whilst cooking.
Its a staple dish which originated in ancient India but has spread widely throughout Eastern Europe.
This was very easy to make and accompanied with a green salad, you have yourself dinner on the table in a very short time.
Apologies for the video, it wasn't taken very well :(

2 medium brown onions, thinly sliced
500g beef, minced
2 tablespoon of curry paste
400g os cauliflower, roughly chopped (cooked)
1 1/2 cups of basmati rice
2 cups chicken stock
400g lentils, brown (canned)
1/4 cup chopped parsley
Heat oil in a large saucepan over medium heat. Cook onion, stirring occasionally for 5 minutes. add mince meat, cook a further 5mins or until once has browned. Add curry paste, and rice , and cauliflower.
Add stock and 2 cups of water. Bring to boil. Reduce heat to low, let simmer for 12mins or until rice is tender. Stir frequently so rice doesn’t stick to the bottom of pan.
Add lentils and parsley and leave simmering for a further 3mins.
Ready to be served.
