These made a great little side dish!
Another simple recipe that in no time was ready to serve.
Served with a splash of mayonnaise , these little treasures were delicious!
This recipe came from my mother’s 40 year old cookbook which she brought with her from Uruguay at the time she migrated to Australia. This great cookbook was published in 1977!
I must have selected the easiest recipe in the book which is not a bad thing! These recipes are in Spanish, a little extra practice in reading in Spanish will come in handy when tackling some of the more challenging recipes, and I'm so looking forward to it :)

RECIPE
Makes 12
12 rindless shortcut bacon pieces
250g snow peas, sliced
250g frozen peas, defrosted & well drained
salt and pepper
toothpicks
Mayonnaise
Preheat oven to 180C
Place both peas in a bowl and mix well. Season with salt and pepper.
Place each bacon piece flat on a chopping board or a flat surface. Cover with greaseproof paper. With a rolling pin, flatten each of the bacon pieces. Remove the greaseproof paper.
Take a muffin tray, place each bacon piece in a muffin hole and add 1 large tablespoon of peas in each. Secure with toothpicks.
Place in oven and bake for approx 15mins or until bacon is crispy.
Serve with a splash of mayonnaise
