For this recipe you can either use spinach or silver beet. I think the silver beet has a lot more flavour than the spinach and it is a favourite of mine.
The pie was delicious! I made it all fancy, cutting it in round portions, and if you choose to do the same, be prepared to have a lot of wastage. My suggestion is to cut it in slices with no wastage at all!
Super easy to make! A great little side dish or serve as a main with a green salad.

RECIPE
Serves 4
1 bunch of silver beet or 2 of english spinach
1 tablespoon of olive oil
4 green onions, sliced
2 tablespoons of fresh dill, chopped
150g feta cheese, crumbled
1 cup grated tasty cheese + 50g extra
5 eggs
Salt & pepper
1/2 cup of self raising flour
1 1/2 cups of milk
Preheat oven 180C.
Lightly grease a 4 cup capacity oven dish.
Wash spinach, if using silver beet remove the spine.
Place in deep pot with a little water on the base. Turn silver beet or spinach frequently for 2mins after water is almost boiling. Take off heat and drain well. Allow it to cool.
In a bowl, break the eggs and whisk until smooth. Add the milk and mix well. Add salt and pepper.
Chop spinach. In a deep bowl, add the spinach, onions, dill, feta & tasty cheese and mix well. Add the flour and the egg mixture. Mix well .
Pour spinach mixture in prepared dish , sprinkle with extra tasty cheese and bake for approx 30-35mins or until golden on top. Cut into wedges or slices. Serve with a salad.
