A messy recipe but yummy! Making these cakes was stressful. I had no idea how they were going to look! Mixture was way too soft for cakes/patties! I kept my fingers crossed that they would turn out ok & in the end they weren’t too bad. The mixture with bacon, cabbage and cheese was delicious! If you can overcome the ‘messiness’ and presentation, go ahead because they did taste yummy!
Certainly not for beginners. Those with experience might need to change the consistency of the mixture by adding some solids, possibly breadcrumbs :(

RECIPE
Serves 4
4 large potatoes
8 rashes bacon , diced
500g cabbage, shredded
Salt & pepper
130g grated cheese
2 tablespoon of olive oil
Cut the potatoes into pieces, boil for 15-20mins or until soft. Drain well. Mash potato until smooth (this can be done with a food processor or manually).
Heat 1 tablespoon olive oil in frying pan and cook bacon until browned, add cabbage and mix well. Cook until the cabbage is soft. Drain well. Add this mixture to the potato mash and blend well. Add grated cheese and mix well. Add salt & pepper to season.
Heat 1 tablespoon of olive oil in frying pan, drop a large tablespoon of mixture and allow it to brown and set at the bottom of cake. Carefully flip over to allow it to brown & set on other side. Serve warm, with a salad or on toast as a breakfast alternative.
