This is an amazing cookbook! It is a collection of recipes from restaurants from the reports and theme parks in Disneyland and Disney World. This recipe is from the menu at the Disney Polynesian Resort.

Lo mein noodles are similar to spaghetti. The only difference is they are made with egg. I made this recipe with spaghetti as I had plenty in my pantry!

Delicious, very easy! You can make it spicier by adding tabasco sauce but that wasn’t going to work in my household.

RECIPE

Serves 4

500g minced beef

olive oil

1/2 cup chopped onion

1 chilli, chopped

1/2 cup chopped shallots

2 cloves of garlic , chopped finely

1/4 cup of chopped parsley

2 teaspoons of cumin

2cups of tomatoes, diced

2 tablespoons of tomato paste

4 cups of lo mein noodles, cooked (approx 400g uncooked)

1/2 cup grated cheddar cheese

Heat olive oil. Brown the mince beef, approx 4-5mins. Drain and set aside.

Heat a pot of water and cook lo men noodles as per instructions. When cooked, set aside in a little bit of water so noodles don’t stick. You can use spaghetti if lo men noodles are not available.

Heat some extra olive oil in wok.

Stir fry the garlic, chilli, shallots and onions until just soft. Add the tomatoes, parsley and tomato paste. Simmer for 6-7mins.

Add the minced beef, cumin powder and mix well.

When cooked through, add the noodles and heat through. Remove from heat and serve plate with grated cheddar cheese.
