This recipe was part of my recent frittata recipe.
I felt it needed its own space to shine! If you want an alternative to a salad why not roast your tomatoes! You can also use them in a pasta , top a pizza or just served with chopped oregano as a side dish.
Super easy and delicious!
6 roma tomatoes
2 tablespoons of vinegar
Salt & pepper
Heat oven at 180C.
Cut tomatoes in quarters.
Mix olive oil and vinegar in a bowl.
Line a tray with greaseproof paper. Place tomatoes on tray, drizzle with olive oil and vinegar mixture.
Bake the tomatoes on 170-180C for approx 30mins or until they are tender and gold in colour.
Remove from oven and allow to cool.
