If you’re looking for a really easy dessert to put together for a party, a special event or just for the family, here it is!
No cooking required ( you may need to microwave the chocolate to melt it if using choc bites)
The combination of ice cream, berries , peanuts, marshmallows and coconut was delicious!
I made these at Easter time and in no time they were served……and demolished! Another simple & delicious dessert you must try!
RECIPE
Makes 4
1/2 cup of vanilla ice-cream
200g cooking chocolate
2 tablespoons of brown sugar
1 1/2 teaspoons of vanilla paste or essence
250g strawberries, sliced
8 large scoops of trip-colour ice cream (vanilla/choc/strawberry)
150g blueberries
125g mulberries
1/2 cup of mini marshmallows
1/4 cup peanuts, chopped
1/4 cup coconut shredded, toasted
Place shredded coconut on tray and microwave for 2-3 mins. Remove from microwave and mix with a spoon. At first glance, you will not see that it has changed colour. When mixing you will see that the centre of the dish has browned. Set aside to cool.
In a bowl, add the vanilla ice-cream, vanilla paste and cooking chocolate
Please note: if the cooking chocolate is not in the form of sprinkles, please place in the microwave for 40secs to soften. Remove and add it to the ice-cream mix. Mix well until smooth.
Prepare your serving cups. Place a large spoonful of ice-cream in each cup. Follow it with the berries, peanuts, marshmallows, chocolate mix & coconut. Repeat again.
Ready to serve, immediately.
