BREAKFAST BLEND (with avocado)

A blend of avocado, ginger, apple & lemon juice, yoghurt, bean shoots & brazilian nuts, add a bunch of sliced strawberries and you have a truly delicious breakfast that will keep you going nicely until lunchtime!

RECIPE

Serves 4

450ml of apple juice

juice of two lemons

2 avocados, stoned & peeled

20 brazilian nuts, soaked in cold water (approx 1hr)

a handful bean shoots

1 tablespoon grated ginger

200ml plain yoghurt

150g strawberries, sliced

In a blender add apple juice, lemon juice, avocados, brazilian nuts, beans, ginger and yoghurt and blend until smooth.

Transfer the blend into a bowl and add half of the strawberries. Mix well.

Serve in bowls and top with the rest of the sliced strawberries.
