TOMATO & OLIVE CHICKEN

A typical Italian dish with olives and chicken along with pasta which was delicious! I’m always surprised at how many people do not like olives! I can’t get enough of them. Spanish black olives are always my favourites!
This was an easy recipe and one that can be prepared in a very short time.
PLEASE NOTE : I was not able to use tomatoes in the video because I had a guest who was allergic to them. Add 400g of diced tomatoes with the olives.
1 1/2 tablespoons of olive oil
8 chicken drumsticks
1 large onion, diced
2 garlic cloves, chopped finely
1 large red capsicum, chopped
1 1/2 cups chicken stock
3/4 cup pitted kalamata olives
1/4 cup fresh parsley, chopped finely
Cooked pasta to serve
Heat olive oil in a frying pan. Cook chicken for approx 5mins or until browned. Transfer to a casserole dish.
In the same frying pan, fry the garlic and onion until onion is soft and browned. Add capsicum, fry until softened. Add stock, parsley & olives.
Add half the mixture over the chicken drumsticks. Bake in moderate oven for 20mins.
In the meantime cook the pasta and mix with the extra capsicum mixture.
Transfer the pasta to a serving plate and top with the drumsticks.
Ready to serve
