CHEESY BEAN DIP

Nothing beats a home made dip…..nothing!
MAKES 2 CUPS
1 tablespoon butter
1/2 onion, chopped
1/3 cup of milk
430g mixed beans, canned and drained
1 cup grated cheese
1 tablespoon of red chilli, chopped
Tortilla chips to serve with dip
In a saucepan melt butter, add onions and chilli. Fry until onions are soft. Add beans and mix well. Add milk and keep stirring for approximately 1min. Turn heat off and add cheese. Allow it to melt.
Witha hand held blender/ chopper chop until the mixture is smoother in texture (allowing some chucks in the dip)
Pour into a dip plate and serve with tortillas/CCs
Note: if you wish it to be thinner, add a little extra milk.
