FANCY SAUSAGE SANGERS

This was a fancy sausage on a roll and it was so good!! So very good!!

I made these with the Angus Beef Sausages which gave it an amazing taste and is also a healthier option but of course, if you happen to have a different sausages in your fridge, use those instead!

I just loved the gherkins, capers, capsicums with garlic and chives and mixed with mayo. It was a a winner for me!

RECIPE

Serves 4

1 clove garlic, crushed or chopped finely

3 gherkins, chopped

50g chargrilled red capsicums

Handful of chives, chopped finely

2 tablespoons of capers

1 tablespoon olive oil

Salt & pepper

500g Angus beef sausages

300g pkt mini white french sticks or 4 hotdog buns

Mayonaise, 1 cup

40g baby rocket leaves

150g cherry tomatoes, halved

Heat olive oil in frying pan. Fry the garlic and chives lightly. Add capers & capsicum, after a minute turn heat off. Add gherkins & tomatoes, mix well. Season with salt and pepper.

Place sausages in a row in an oven proof dish. Prick each sausage and grill for approx 3-4 each side, until cooked through. Cut them diagonally and in large portions.

In a bowl, add mayonnaise and capsicum mixture and combine well.

Slice roll in half and add capsicum./gherkin mixture, rocket and sausage. Ready to serve.
