HAM & EGG SALAD

Wonder what else you can add to a green salad to make it a little different? Add mushrooms, spring onions, ham and egg, add your favourite dressing and you have yourself a delicious salad to serve to your family and friends!
400g leg ham, off the bone preferably , sliced thinly
4 eggs, boiled and cut into half inch slices
300g mushrooms, sliced
200g baby cos lettuce, sliced in 1 inch slices
4 green shallots, sliced thinly
salad dressing of your choice
Place eggs in a saucepan, cover with water, bring to boil and simmer for 5mins. Rinse in cold water and peel of shell. set aside.
In a frying pan, add a tablespoon of oil, on medium heat add onions and mushrooms and fry for a min or two only. Drain and set aside.
Place the lettuce in a serving dish. Add ham and mix well. Add cooled mushroom mixture and mix well. Add salt and pepper, and your favourite salad dressing. (I used french dressing and it was a great choice!) Add egg and fold into salad carefully.
It’s now ready to serve.
