What can I say…..simple and delicious! In no time it was ready to be served……and it didnt smell fishy! Really enjoyed this recipe.

RECIPE

Serves 4

500g thin white fish fillets

1/3 cup self raising flour

1/3 cup cornflour

1 large egg, lightly beaten

1/2 cup iced water

Oil for deep frying (I used olive oil)

Soy saúce for dipping

Sift both flours in a bowl,make a well in the centre, then gradually add egg and stir until smooth. Gradually add the iced water and keep stirring until you have a smooth batter. Cover and let it stand for 10mins.

Heat half fill a deep pot with oil . dip fillets in batter and drop in oil to cook until golden (approx a min if oil is hot)

Remove and place on kitchen towels to drain, keep warm. ‘Repeat for all fillets. Serve with dipping sauce.
