CHICKEN & BASIL FRIED RICE

We can spend days arguing that my corner Chinese shop makes better fried rice than your corner Chinese shop…..but in reality the best fried rice is the homemade rice!
This recipe was out of this world, just totally delicious!
I loved all the ingredients, full of flavour
Olive oil cooking
1 large red onion, sliced finely
4 cups shredded BBQ chicken
2 medium carrots, peeled and cut into matchsticks
3 cups long grain rice, boiled and drained
150g snow peas, trim ends and cut cut into strips lengthways
2 cups beansprouts, chopped roughly
2 eggs, omelette, sliced stips, lengthways
2 tablespoons soy sauce , plus extra
2 garlic cloves, chopped finely
1/3 cup chopped basil, fresh
Heat oil in wok on medium heat. Fry garlic , add carrots, basil & stir fry for one minute. Add red onions and stir for a further minute. Add bean sprouts, snow peas and egg and stir fry for another minute or until heated through. Add soy sauce and chicken and mix well. Add boiled rice and a little extra soy sauce and stir fry until just heated through.
Ready to be served.
