BBQ CHICKEN SALAD

We can cheat for this one! We can buy a cooked BBQ chook and shred the meat for this salad! How easy is it to make an absolutely yummy, refreshing salad.
Add your onion, black beans, tomatoes, corn and cheese along with the chicken, on a bed of lettuce and you have a salad that everyone will enjoy!
2 tablespoons olive oil
1 cooked chicken, meat shredded\
Salt & pepper
12 cups iceberg lettuce, shredded
2 tomatoes, diced
2 cups corn kernel, drained
2 cups black beans, rinsed and drained
1 small red onion, diced
2 cups shredded cheese
1/2 cup ranch dressing
Heat olive oil in pan. Fry onion until soft. Add black beans, corn and season with salt and pepper. Add shredded chicken and leave on heat for a few seconds after mixing well.
Take off heat and add tomato. Set aside.
Let cool for 5-8mins, turning chicken mixture a few times.
Add the cheese and mix well.
Place the lettuce on serving plate. Decorate with BBQ sauce.
Add ranch dressing to chicken mixture. Mix well. Place chicken mixture on top of the lettuce. Decorate with BBQ sauce and its ready to be served.
