APPLE CRUMBLE DESSERT CAKE

A different way to make an apple cake. What I liked about this recipe was the introduction of the custard powder along with the sour cream and of course my favourite, cinnamon! loved it!
If you cut this cake into bite sizes it can look very presentable for a tea party.
Please note: I’m always cooking and baking with limited time on my hands so a food processor & mixer is always handy. You can use a hand held beater for part of this recipe and slice apple by hand if these appliances are not available.

220g butter, chopped
4 eggs, at room temperature, beaten lightly
2 1/4 cups self raising flour
1 1/2 cup sugar
1 cup sour cream
1/3 cup custard powder
1 tablespoon vanilla essence
800g apple, peeled and sliced thinly
1/2 cup plain flour
1/3 cup white sugar
1 tablespoon ground cinnamon
1 teaspoon baking powder
75g chilled, chopped
Pre heat oven 180C.
Grease a 5cm deep, 20cm x 30cm slab pan. Line with baking paper, allowing a 2cm overhang on both ends of tray.
In a mixer, beat butter, eggs, flour, sugar, sour cream, custard powder and vanilla essence for 3 mins or until pale and fluffy.
Pour half of the cake the mixture into prepared dish. Spread evenly. Spread half of the apple evenly over the top. Top with remaining cake mixture. Top with remaining apple.
To make the apple crumble, combine flour, sugar, baking powder and cinnamon in a bowl. Using a fork and then your fingers to rub butter into flour. It should represent coarse breadcrumbs. Sprinkle crumble over cake mixture and sprinkle a little more cinnamon over the top.
Bake cake for 1 hour in a moderate oven or until cooked through. Cut into cake portions or bite size portions.
