BEEF & CASHEW STIR-FRY


COOKBOOK: Quick & Easy Meals in Minutes


The cookbook was quick and easy, the recipe was quick and easy! No fuss, simple to make, serve with rice and dinner will be served in no time.

You can substitute the beef for chicken if you wish.




Recipe Serves 4

Olive oil for frying

600g rump steak

1 onion, halved and sliced

1 tablespoon garlic powder

1 red capsicum, sliced in strips

1 green capsicum, sliced in strips

2 tablespoon of cornflour

150ml beef stock

1 tablespoon soy sauce

1 tablespoon oyster sauce

4 tablespoon vinegar

60g cashew nuts, crushed slightly

Note: have the meat slightly frozen before you start slicing. This will make it much easier to control the cut and ensures it is sliced thinly

Heat 1 tablespoon of olive oil in wok. Stir fry the beef, approx 3-4mins. Remove and set aside.

Remove juices from wok, add 1 tablespoon of olive oil, stir fry the onion, approx 3 mins. Add oyster and soy sauce. Stir fry for a further 1-2mins.Add stock & vinegar. Simmer for 2-3mins.

In the meantime, in a pan add 1 tablespoon of olive oil, fry the capsicum for approx 2mins and add to the onion mixture. Add the beef. Mix the cornflour and 4 tablespoons of water until smooth and no lumps.

Heat on the stir fry can raised. Pour the cornflour in beef mixture and combine well. Keep mixing until the liquid starts to thicken in texture, approx 2-3 mins. Turn heat off.

Add cashews, mix well. Ready to serve with noodles or on a bed of rice.
