COOKBOOK: Mariela’s Blue Folder- That’s Life


It originated in the UK back in the 18th century and it was a dish of fried meat and cabbage. Nowadays it is more often fried potatoes and other vegetables, usually greens and any left overs from the previous meal.

There is many varieties of this dish now available and this one was very nice.

Simple to make, add any left overs chopped up and you will have another dinner to serve! PS The photo is not very good, blame the photographer who forgot to take a pic! :(

RECIPE

Serves 4 or 6 as a side dish


3-4 medium potatoes, cubed

3 cups chopped vegetables, frozen and defrosted

1 cup breadcrumbs

1 cup parmesan cheese, grated

Salt & pepper

6 shallots, sliced

Olive oil for frying


Add the cubed potato in a deep pot and fill to the top with water. Bring to boil and simmer for approx 15mins or until potato cooked though. Drain and set aside.


In a processor add the potato, sliced shallots and blend until all combined well and potato mashed. Place the mixture in a deep bowl.


Add the defrosted and drained vegetables in the processor. Chop them up until chopped small. Place them in the bowl with potato mixture. Add the breadcrumbs, parmesan cheese, salt & pepper. Mix well. Take 1 and half tablespoons of potato mixture and mould into a patty. Repeat with the rest of the potato mixture. Add olive oil in a frying pan, cover the base. Heat the oil and add the patties. Fry for approx 1-2mins on each side or until golden in colour. Carefully remove the patties and place them on kitchen tissue for a minute, then it’s ready to serve.
