If you have never made burgers, here is a simple and easy recipe which will turn you into an instant pro! After making homemade burgers you’ll never want to get takeaway. These burgers are served with bacon, lettuce and avocado but you can substitute with tomato and onion or if you’re feeling like a challenge add a fried egg to make it a super burger!

RECIPE
Serves 4
600g chicken breast, cut into chunks
3/4 cup breadcrumbs
4 shallots, sliced
4 tablespoon parsley, chopped
Salt & pepper
2 large eggs, lightly beaten
1 tablespoon of milk
1/2 cup mayonnaise
1 tablespoon dijon mustard
1 tablespoon lemon juice
4 large rashes of bacon
Olive oil for frying
4 burger buns, split in half
Lettuce , shredded
2 large avocados, sliced
Place chicken breast pieces in a processor and process until it is minced. Transfer to a deep bowl. Add the breadcrumbs, shallots and parsley, salt and pepper. Combine the egg and the milk, add to the chicken mixture. Take one large tablespoon and half of mixture and with the palms of your hands shape it to turn it into a patty, set aside.
Combine the mayonnaise , lemon juice, mustard, set aside.
Fry the bacon in a hot pan until crispy on both sides, approx 3-4mins on one side and 2-3 on other side.
Add a little olive oil and fry the patties for approx 4-5mins on one side and 4mins on other side, or until golden & cooked through.
Spread mayo mixture on each half of the buns. Add patty, bacon, lettuce and avocado. Close burger and it’s now ready to be served.
