CHILLI CON CARNE

Chilli Con Carne originated in Souther Texas and become widely popular in places such as Mexico.
A great dish that can be served up with just about anything from pasta or rice, with sour cream or a good crusty bread or tacos. You can make it as spicy as you wish. This recipe is just perfect for the family!
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, crushed
2 celery sticks, sliced
600g mince lean beef
1 tablespoon of dry oregano
420g red kidney beans
425g can crushed tomatoes
2 tablespoon tomato paste
1 teaspoon brown sugar
1 tablespoon balsamic vinegar
Heat the oil in a deep pan. Add onion and fry until just soft, add celery, garlic, stir well. Fry for a min or two.
Add mince. Mix well. Simmer, add chilli, canned tomatoes, red kidney beans, tomato paste, mix well .
Add white pepper, dry oregano, sugar and vinegar.
Simmer for a further 20mins.
Let it rest for 5mins. ready to serve.
It can be served with rice, pasta or even tacos or a good crusty bread. You can add cheese on the top or sour cream. If served with pasta or rice, retain the juices. If served with tacos, you can release some of the juices (freeze and keep for a stock)
