CHOC BLISS BALLS

These little balls of energy were highly addictive! Its very hard to stop at one…….delicious! A ball of goodness that can be made for a snack, school snack or just to have them in the fridge when you feel a little peckish. Very easy to make and no cooking involved. You will need a processor to get the fine texture.




RECIPE

Makes 30

14 pitted dates

1/4 cup goji berries

2 cups of almond meal

1/2 cup cacao powder

4 tablespoons of coconut oil

1 cup of shredded coconut

1/3 cup extra coconut, finely shredded

4 tablespoons of maple syrup (flavoured or non flavoured)

Process dates and goji berries for approx 30secs. Add almond meal and cocoa, process for a further 30secs.

Add 1 cup of shredded coconut and coconut oil, add maple syrup and process until smooth and well combined.

Place mixture in a bowl. Take a large teaspoonful of mixture and roll into the shape of a ball. Repeat and set them aside.

In another bowl, place the finely shredded coconut. Roll snd coat each ball in the coconut. Refrigerate for an hour, ready to serve. Best to keep leftovers in the fridge.
