CHORIZO & POTATO SALAD WITH PARMESAN

So chorizo is probably not necessarily a healthy food but OMG it taste good! Stick it in a salad and it tastes even better!
The blend of chorizo with sun dried tomato, onion and potato along with a splash of parmesan makes this a super delicious salad and one which will be the envy of your dinner party.

RECIPE
Serves 4-6
500g potatoes, cubed
salt & pepper
1 teaspoon of olive oil for frying
2 tablespoons of olive oil for dressing
250g chorizo, sliced
80g sun-dried tomatoes, strips
1 teaspoon of lemon zest and juice of one lemon
1 tablespoon of parsley, chopped
juice of one lemon
2 cloves of garlic, chopped finely
large handful of lettuce leaves
Parmesan cheese, grated or shaved
Fill a medium pot with water. Add the potatoes and bring to boil. Simmer for approx 12-14mins. Carefully drain the potatoes, rinse carefully under cold water for 2-3 mins. Set aside. (to cool them down completely you will need a good 20 to 30mins)
Heat olive oil in pan. Add garlic and red onion and fry until onion is softened. Add the chorizo and sun dried tomatoes, parsley and lemon zest. Fry for a further few minutes. Season with salt and pepper. Set aside.
In a small bowl, squeeze the juice of the lemon. Add the extra olive oil, salt and paper for seasoning. Mix well.
Arrange salad leaves on a serving plate.
Take the chorizo mixture and place it in a wide mixing bowl. Carefully add the potatoes (which should now be cool) and careful combine with the chorizo.
Sprinkle some of the dressing on the salad bed. Arrange the chorizo and potato mixture over the lettuce bed and sprinkle further dressing over the salad. Sprinkle parmesan cheese. Ready to serve.
