CHOW YUK STIR FRY WITH HAM

Chow Yuk means sautéed vegetables in Chinese.

add a meat to this stir fry, for instance beef and you have beef chow yuk.


This recipe was for turkey but it gave me some other options , one of them being leg ham which I just happen to have in the fridge.


A delicious, healthy and simple dish

RECIPE

Serves 4


2 tablespoons of olive oil

200g of leg ham, shaved or sliced thinly

salt and pepper

1 onion, sliced

100g snow peas, ends removed2 cups of celery , sliced

100g cup mushrooms, sliced

1/2 cup of bamboo shoots, sliced

100g bean sprouts, chopped lightly

1 tablespoon of soy sauce

1 cup chicken broth

1 tablespoon of cornflour

4 tablespoons of water

250g hokkien noodles , cooked as per package instructions


Heat oil in wok. Fry onion until slightly golden in colour, add snow peas, add bamboo shoots, bean sprouts, celery, stir fry for a minute.

Add mushrooms and ham, stir fry for another minute. Add stock and soy sauce, simmer for a further minute or two.

Mix the cornflour and water in a separate small bowl unit cornflower is diluted. Add this to the ham mixture. stir immediately, until it thickens lightly (approx 1-2mins). Add cooked noodles.


Blend well and ready to serve.
