HALOUMI & CITRUS LENTILS


COOKBOOK: MAGGIE’S KITCHEN

Here is a slightly different variation to lentils accompanied with haloumi, it was delish!

I like to buy the block haloumi and slice it up myself but unfortunately there wasn’t any available and I got stuck with the pre-sliced haloumi which I was not impressed with. If they are going to pre-slice, they need to look at the consistency of the thickness. IT was all over the shop and I couldn’t fix it :(



RECIPE

Serves 4


1 large oranges, juice

2 limes, juice

a handful of parsley, chopped

220g brown/green lentils

Salt & Pepper

1 table spoon olive oil , plus 2 tablespoons for frying

300g haloumi cheese (approx 12 slices)

flour for dusting

1 lime sliced


Combine orange and lime juice . Set aside 1/4 of the mixed juices. Combine the rest of the juice in 1.5litres of water in a medium saucepan. Add lentils and bring to boil. Simmer for 20-25mins. Drain lentils and set aside.

In a bowl, combine the remaining juice, olive oil, salt & pepper and set aside.

Dress the lentils with half of the parsley mixture.

Coat the haloumi cheese in flour. Heat the olive oil in the pan and fry each piece until golden. Do not overcook as it will turn out chewy and hard.

Place the haloumi pieces over the lentils and add the balance of the parsley mixture over the cheese. Serve with slices of lime.
