HAM & CHEESE OMELETTE

Great omelette! I loved the mix of the muesli with the dried fruit! It gave it a slightly sweet taste. Really, really nice!
2 large eggs (or 3 small eggs)
salt and pepper
2 tablespoons of muesli with dried fruit
2-3 slices of ham
half of a tomato, sliced thinly
handful of grated cheese
Whisk the eggs in a bowl, add the muesli and mix.
Melt some butter on the base of the pan. Pour the egg mixture and swirl pan until the egg has completely covered the base of the pan. Allow it to set for half a minute.
Take the ham and place it on half of the omelette, top with tomato, season with salt & pepper, add grated cheese and fold the other half of the omelette over the filling. Press lightly and allow it to cook for another half minute or until it is completely set.
With a flat spatula, slide all the way under the omelette, lift gently and place on a nearby plate. Ready to be served,
