HOT POTATO SALAD


I think a warm potato salad represents Winter and colder months and here is a simple and easy to make variation of this salad. It can be served with a grilled meat , sausages or a crumbed schnitzel.


Are potatoes fattening? Actually, they are full of fibre and studies say that they keep you full for a longer period of time which can then lead to weight loss…..I bet you didn’t know that!


Fibre can prevent heart disease by keeping cholesterol and sugar levels in check. They are also full of antioxidants and vitamins that help your body function well.


Now for the bad news…… if you have diabetes, according to further studies, the carbs in potato are digested by the body quickly and therefore push the glycemic reading high (High GI) . This means they cause the blood sugar and insulin to surge and then dip. This should be noted and probably a good idea to cut down in consumption.

RECIPE

Serves 4-6 as a side dish


1kg potatoes, peeled and cut into large bite sizes

1 tablespoon olive oil

3 sticks celery, sliced

1 cup sliced gherkins

120g cubed or rectangular slices of cheese

2 tablespoons chopped chives

2 tablespoons chopped parsley

1/2 cup sour cream

1/2 cup French dressing


Place potato in a deep pot, cover with water. Bring to boil and simmer for 15-16mins or until potato cooked through but not too soft. Drain and leave on the side in the colander for potato to come to room temperature. Do not stir.


Heat the oil in a deep frying pan, add the celery and fry for a min until just soft. Place the celery in a deep dish and add the gherkin, combine well. Set aside.


Place the sour cream, chives and dressing in a bowl and combine well.


Carefully place the potato in a serving plate. Top with celery mixture, cream dressing and cheese and carefully combine, ensure you don’t break up the potato too much. Sprinkle with parsley.


Ready to serve
