KIDNEY & SAUSAGE TOASTIES

Organ meats are incredibly nutritious. Kidneys are rich in omega3 fatty acids and it also contains an anti-inflammatory properties that are good for the heart.
I personally love the taste of pan fried kidneys in any meal. These toasties with some sausage & bacon were the bomb! Even my daughter who is not overly keen on the sight of lamb’s kidneys was enjoying every bite and even went for seconds!
6 thick slices of white bread
8 lamb’s kidneys, cut into half
4 x tomatoes, diced
12 x cevapis, grilled and cut into half (small sausages)
2 handfuls of parsley, chopped finely
4 rashes of bacon, diced
1 tablespoon of olive oil
Ensure you have cooked the cevapis in the grill. Once they have cooled down slightly, cut in half or cut into three pieces if they are a little longer. Set aside.
Heat olive oil in a frying pan. Add the bacon, fry until just crisp. Add the lamb’s kidney and fry for 10mins. Add parsley and tomato and pan fry for another 5mins.
Toast the bread slices in either a toaster or grill. Butter each piece of toast. Add 2 large tablespoons of kidney mix on the bread. Ready to serve.
